Direct-pressed dry rosé that packs a punch of flavor--peachy tangerine with a slippery smooth texture. As always, ours is a bone dry French style. We farm a cooler-climate cabernet franc vineyard block specifically for rosé, harvesting at 22-23brix, much earlier than sweeter, fully-ripened fruit grown to produce a rich dark red wine. The early harvest--like with a sparkling wine grape--preserves natural acidity and the bright orange-pink fruit character we love in fresh dry rosé.
After crushing, grapes are macerated just a few hours to extract a bit of color and aromatic nuance from the skins before pressing. Fermented cool to completely dry in stainless steel then stirred relentlessly over a few months aging on the lees. This level of handwork is a labor of love!
Virage Rosé fans will find this vintage very similar to 2012 and 2014 in weight and flavor intensity. We picked wee riper than the delicate 2015 vintage. Think Peaches & Cream, with a particularly SMOOTH texture; you can sip this wine alone any day of the year. But so easy to pair--all the fresh and grilled foods of summer, bake up some salmon or toss a shrimp salad in winter. Always amazing with sushi, tacos, lobster rolls... We love pink with pork no matter how prepared--cured, grilled, pan-fried, shredded in tacos, ground in Asian meatballs, torn into mu-shu pork, proscuitto and charcuterie plates, etc... 364 cases produced.
