Direct-pressed rosé packs a punch of flavor--peachy tangerine, and super slippery smooth this vintage. As always, we grow cabernet franc specifically for rosé, harvesting long before a fully-ripened red grape grown for a rich dark red wine. This preserves natural acidity and the bright orange-pink fruit character we love in dry rosé. Sorted, crushed grapes macerated just a few hours to extract a bit of color and aromatic nuance from the skins before pressing to separate the juice to ferment completely dry in cool stainless steel. Stirred relentlessly over a few months aging on the lees. Nobody making a profit with this level of handwork, it's just a labor of love!
Virage Rosé fans will find this vintage similar to 2012 and 2014 in weight and flavor intensity. We picked wee riper than the very delicate 2015 vintage. This is Peaches & Cream, with a particularly SMOOTH mouthfeel; you can drink this wine alone any day of the year. But of course, rosé is so easy to pair. Bake up some salmon in winter, grill up shellfish, chicken, veggies in summer, and always delicious with pork no matter how prepared, or cured, or pan-fried, shredded in tacos, ground in Asian meatballs, torn into mu-shu pork, etc... 364 cases produced. Half-bottles also available by the case.
